Hand-tempered truffles and drinking chocolate, made in small batches in the Blackwood Valley. We roast, winnow and conch on site — the whole thing takes four days, and we would not shorten it.

How it is made
i.
Beans roasted in small drums, then cracked and winnowed by hand to separate the nib from the husk.
ii.
Seventy-two hours of slow grinding. This is the part that cannot be rushed, and the part most people skip.
iii.
Tempered by hand to a proper snap, then set in moulds and rested overnight before wrapping.
